Hi, I’m Mark, co-owner and Head Chef at MADHAM Catering. I come from beautiful Sussex, England, where I spent countless weekends roaming free on Grandad’s farm. That’s where I had the chance to explore, meet farmers, learn how to get close to a deer or tickle a trout: it was the beginning of my life-long search to find out about food and where it comes from. To this day, I still walk the same path.
Classically French trained at catering college, I had the opportunity to train at the Intercontinental Hotel and Goring Hotel in London (that’s right, it’s where Kate Middleton spent the night before her wedding). Here my eyes were opened to produce from all over the world, which eventually inspired me to go travelling through Europe and the Middle East, spending most of my time in small towns and villages where I could learn about authentic local culinary traditions.
In early 2008 my wife Deb and I moved away from the restaurant scene to open MADHAM catering as a way to spend more quality time with our two children without giving up our passion. MADHAM stands for Mark (me), Deb (my wife), Henry (our son) and Mim (our daughter)… Read the whole story in the blog
Our Food Philosophy is simple…
It’s no secret that good food can only come from good ingredients. We are committed to using the best ingredients available, sourcing locally whenever possible. Every morning we cook each order from scratch in our five star rated kitchen. We can confidently tell you what’s in every single item on our menu, because 99% are made by us*.
Our care for the environment is in picking local produce and in serving our food in sustainable tableware: we use bamboo as it is eco friendly, yet sophisticated and practical.
